Miso soup

Dashi ingredients

  • 4 cups Water
  • 10 g Katsuobushi
  • 10 g Kombu

Topping ingredients

  • 4 tbsp Miso
  • 100 g Tofu
  • 2 Spring onion


Dashi Instructions

  • Combine the water and kombu in a saucepan and if possible, leave for about 1 hour. 
  • Bring the pot to boil under medium heat.
  • Remove the kombu just as the water starts to come to a boil and add the katsuobushi (bonito flakes) and let the water come to a rapid simmer.  
  • Simmer for about 5 minutes, then remove the pan from heat. Strain the katsuobushi from the dashi.  

Miso Soup Instructions

  • Slice the spring onion very thinly, cut the Tofu into small pieces. 
  • Pour the dashi into the saucepan and bring to a rapid simmer over medium-high heat. 
  • Add the Tofu in the saucepan. 
  • Put the miso in saucepan and whisk with chopsticks until the miso is entirely dissolved in the dashi soup. 
  • Finally put the spring onions in the saucepan. 
  • Check the taste. 
  • Serve in individual bowl and enjoy it
